We've got avocado sushi in our bentos! We love sushi around here and were very pleased to see it in our bento lunches this week. Accompanied by a green salad, orange slices and a cookie for dessert, this sushi lunch has gone straight to the top of our favorites list!

Festival of Lights Bento

As the Jewish Festival of Lights comes to a close, we decided to get creative with this menorah-inspired bento lunch. We hope you enjoy this festive bento as much as we did. Happy Holidays!

Menu

Cream Cheese and Lox Sandwich on Whole Wheat Bread
Swiss and Cheddar Cheese "Candles"
Dried Cranberries and Cucumber Peel
Cinnamon Rice Pudding
Orange Slices

Preparation Notes

Smear softened cream cheese onto a piece of whole wheat bread and top with fresh lox.

Get creative. Since we were in the holiday spirit, we dressed up our sandwich with candles and flames made out of Swiss and cheddar cheese. The candle base is decorated with dried cranberries and peeled cucumber.

Make cinnamon rice pudding for your medium lidded container. We used this healthier version: http://www.food.com/recipe/Heart-Healthy-Cinnamon-Rice-Pudding-295019.

Add orange slices to your remaining medium container.

Egg Salad English Muffin

* Egg Salad Sandwich
* Red Bell Pepper Strips
* Oranges Slices
* Broccoli Florets
* Thousand Island Dressing


Preparation Notes


Add some pizazz to your everyday egg salad. Pile it atop a whole grain English muffin and add a lettuce leaf, some sprouts, or sliced tomatoes. Oranges can be cut in many ways, and they look great when packed with dark green broccoli, red bell pepper, and yellow egg salad. Your favorite dressing will jazz up the veggies as well.

Prepare an egg salad sandwich on a whole grain English muffin. Include a lettuce leaf or sprouts for good measure

Cut the red bell pepper into strips.

Slice an orange.

Cut some broccoli. Pack it raw or steam it if you prefer.

Pour some thousand island dressing into your little dip container.

Frittatas for Lunch


Menu

* Frittata (Two delicious recipes available HERE.)
* Caesar Salad
* Navel Orange Slices

Preparation Notes

Prepare a frittata of your choice. (Be sure to include lots of fresh herbs and vegetables.)

Slice the orange.

Prepare the ingredients for the Caesar salad:

1. Tear romaine lettuce into bite-size pieces.

2. Prepare the dressing:

   * 1 Tbs. lemon juice
   * 1 tsp. Worcestershire sauce
   * 1 clove of garlic (minced)
   * 1/4 tsp. salt
   * 1/8 tsp. pepper
   * 3 Tbs. olive oil

3. Sprinkle some of the dressing over the lettuce and toss.

4. Add parmesan cheese and croutons (optional).

5. Toss again.

Alternatively, pack the salad ingredients separately and assemble at lunch time.

Vegetable Soup for Lunch

* Vegetable Soup
* Pretzel Sticks
* Mustard Dip
* Pink Orange Segments
* Baked Potato


Preparation Notes

Prepare a large pot of vegetable soup on the weekend to enjoy throughout the week. Be sure to include lots of onions, celery, carrots, cabbage, mushrooms, and parsnips. Add some brown rice, barley, or quinoa if desired.

Pack the pretzels.

Pour your favorite mustard into the dip container.

Peel and segment the orange.

Bake the potato and top with a small amount of butter, salt, and pepper.
